Scott Conant Career

Conant interned at San Domenico, a well-known New York City restaurant, while attending the Culinary Institute of America. This experience had a significant impact on the young chef. He studied pastry at the Hotel Bayerischer Hof in Munich, Germany, for a year following graduation. He worked as a sous chef when he returned to the United States and San Domenico. He was chosen to be chef de cuisine at Il Toscanaccio, a Tuscan-style restaurant on the Upper East Side, in 1995. He went on to become executive chef at City Eatery, a restaurant in New York City on the Bowery.

Conant opened L’Impero in Tudor City in September 2002. The New York Times gave the restaurant a three-star rating within weeks, stating, “[Conant is] turning out dishes full of flavors that are joyful and highly refined.” He is almost always in control and in tune, from the simplest to the most complicated preparations.” Food & Wine featured Conant’s signature pastas on its cover, and in 2004, the publication named Conant one of America’s “Best New Chefs.”

In 2003, L’Impero won the James Beard Foundation’s top awards, including “Outstanding Restaurant Design” and “Best New Restaurant” in the United States.

In Gourmet’s “Chefs Rock” issue in October 2003, Conant was featured on the cover, and in March 2004, Gourmet editor Ruth Reichl named L’Impero one of her favorite New York restaurants. Conant opened Alto, a “sophisticated” Italian restaurant in midtown Manhattan that served his take on Northern Italian cuisine after L’Impero.

In 2007, Conant left L’Impero and Alto to open Scarpetta in Chelsea, Manhattan, in 2008. The restaurant received three stars from The New York Times and New York Magazine in July 2008.
