Maestre traveled the world at the age of 21 and settled in Scotland, where he began cooking and learned English. Maestre worked at Montpelier’s Indigo Yard Partnership. Maestre returned to Spain before relocating to Australia. He has worked in some of Sydney’s top restaurants, including Bather’s Pavilion, Bel Mondo, Cru, and Minus 5 at Circular Quay.
Maestre was 27 years old when he became Head Chef of Tony Bilson’s Number One Wine Bar in Sydney’s Circular Quay, where he had previously worked under Manu Feildel. Maestre opened Australia’s largest Spanish restaurant, El Toro Loco, on Manly Beach after meeting with Spanish chef Ferran Adrià at elBulli.
Maestre was the head chef at El Toro Loco until 2010 when he left due to a legal battle, and the restaurant’s name was changed to El Poco Loco.
In May 2018, Barry Du Bois and Maestre launched Life Force, an autobiographical book about Du Bois’ family, friendships, and life with cancer that includes dietary advice and recipes from Maestre. Maestre won the sixth season of I’m A Celebrity… in 2020.I Need to Get Out of Here! Australia.
