Garces founded his first restaurant, Amada, named after his grandmother, in 2005. Garces filed into bankruptcy in 2018 after several years of financial and legal difficulties, and as part of the restructuring, he sold his restaurants to IdEATion Hospitality.

The fifth season of The Next Iron Chef, a Food Network show with a limited run, aired in 2012.
