He took over as executive chef at Patroon in Manhattan in 1998, where Ruth Reichl, a critic for the New York Times, gave it three stars (excellent). In the spring of 2000, Zakarian worked with Alain Passard, a prestigious French cook at the three-Michelin star café Arpège in Paris.
