In late 2005, he moved to Ventura County, California, and opened Café Firenze in Moorpark and LA Italian restaurant Firenze Osteria in North Hollywood shortly after. In February 2013, Viviani opened a third Chicago restaurant with Chicago’s Dine|Amic Group called Siena Tavern. The Chicago Tribune, Thrillist, and a number of other publications gave Siena Tavern positive reviews.

Viviani initially appeared on television as a participant on the Bravo network’s fifth season of the reality show Top Chef. He finished fourth and was awarded “Top Chef Fan Favorite” by viewers.
