Gillies’s acting career began at the age of 12 when she began attending local open casting calls. She was quickly cast in commercials for companies like Virgin Mobile. Gillies’ first television appearance was in three episodes of The Black Donnellys as a recurring character. She has stated that she was not permitted to watch the entire finished show because her parents felt it was inappropriate for her at the time. She appeared in The Clique, Harold, and Locker 514 in 2008. That same year, she was cast as Lucy in a Goodspeed production of Jason Robert Brown’s new musical 13, alongside Ariana Grande, her future Victorious co-star.

Later that year, 13 made its Broadway debut, becoming the first Broadway production to feature an entirely teenage cast and band. Gillies worked on the show until it closed on January 4, 2009. She lent her voice to other Nick shows, including the Nickelodeon revival of Winx Club and recording the official song, “We Are Believix.” She also appeared as a contestant on BrainSurge and Figure It Out, as well as in an episode of Big Time Rush. Gillies was cast in the Nickelodeon television show Victorious in 2010 as a bad girl and occasional antagonist Jade West, a sitcom about teenagers at a performing arts high school in Hollywood.

Gillies began appearing in small guest roles outside of Nickelodeon in 2012. White Collar and The Exes have both made notable appearances. Gillies was said to be working on an alternative rock album in July 2012.  Victorious ended after four seasons on February 2, 2013. Gillies took a break from acting following the cancellation of the series. She was cast as Courtney in the musical adaptation of Jawbreaker in 2013, and she took part in a reading of the show in Manhattan. The musical was never staged on Broadway. On December 10, 2013, Gillies and Grande recorded a duet of “Santa Baby” for Grande’s Christmas Kisses EP. Gillies appeared in the horror film Animal as Mandy in 2014, as well as the Lifetime film Killing Daddy.

In 2019, Gillies made a surprise appearance alongside Matt Bennett during her Victorious co-star Grande’s Sweetener World Tour in Atlanta on November 19, where Grande and Bennett performed “I Think You’re Swell” and Grande and Gillies performed “Give It Up,” both songs from Victorious. During the COVID-19 pandemic in 2020, Gillies collaborated with Seth MacFarlane on a series of songs, eight in total, for the Spotify playlist Songs from Home. Gillies was cast as the titular character in the upcoming superhero film Catwoman: Hunted in 2021.
