Goldman established his own company, Charm City Cakes, in 2002. Initially, he worked out of his house in Charles Village in Baltimore, Maryland, with the support of two helpers he hired. He employed more people as demand expanded, including artists, architects, and sculptors to work in the bakery. Charm City Cakes regularly employs blow torches as well as power instruments such as grinders and drills to assist in the creation of cake underlying supports.
