Kinch opened Manresa in Los Gatos in 2002, at a difficult time for a high-priced restaurant due to Silicon Valley’s dotcom bust. It received little attention at the time, despite the fact that the local press described it as “a culinary dream venue for those who take food seriously.” He bought the former Village House restaurant location after being encouraged to do so by chef Thomas Keller while retrieving a forgotten wine bag at the French Laundry restaurant in Napa Valley, where Kinch had dined the night before. On July 7, 2014, a two-alarm fire at Manresa caused extensive damage to the restaurant. It reopened on New Year’s Eve, 2014, after extensive renovations and a total kitchen rebuild.

Manresa: An Edible Reflection, a 328-page cookbook co-written by Kinch and Christine Muhlke, was released in October 2013. Eric Wolfinger’s photographs were featured in the book, as was an introduction by Eric Ripert, owner-chef of Manhattan seafood restaurant Le Bernardin.

Kinch then worked in the kitchens of San Francisco’s Silks and Ernie’s restaurants before returning to Northern California to work at the Hotel Clio Court restaurant in Fukuoka, Japan. Kinch stayed in Europe for two more years, working with Dieter Müller at the two-star restaurant Schweizer Stuben in Germany, Marc Meneau at the three-star restaurant L’Esperance in St. Pere-sous-Vézeley, Burgundy, and Pedro Subijana at Akelarre in Spain. In 1995, Kinch and Aimee Hébert opened Sent Sovi, a bistro-style restaurant in Saratoga, California. For seven years, Kinch and Hébert ran the restaurant.
