She immediately began working in restaurants, first in Boston, Massachusetts, and then in New York City. In 1979, she took a break to complete a postgraduate apprenticeship with Master Chef Maurice Cazalis of the Henri IV Restaurant in Chartres, France. Somewhere in the range between 1981 and 1983, she was the gourmet specialist tournament at La Tulipe, a three-star café in New York City.

In light of a legitimate concern for beginning a family, she left café work and started committing herself rather to recipe testing and improvement.
