Blais serves refined American cuisine with a “left coast edge” at Juniper & Ivy. The Johnson Studio at Cooper Carry designed the restaurant. The Crack Shack – Blais collaborated on this second San Diego-based restaurant with chef Jon Sloan and Michael Rosen, which opened in late 2015. The restaurant “serves breakfast, lunch, and dinner through an all-day menu centered on chicken and eggs, from fried to grilled and everything in between.” Crack Shack intends to open additional locations in California, including Orange County and Los Angeles.

Blais moved to Atlanta, Georgia in the year 2000 to open his own restaurant, Fishbone. Initially unimpressed by traditionally Southern ingredients, he discovered ways to elevate them in his own unique style. Trail Blais is a creative culinary firm that has consulted on, designed, and operated some of Atlanta’s most popular restaurants.

Try This at Home was nominated for a James Beard Foundation Award in the Cookbook: General Cooking category in 2014. Blais later opened Juniper & Ivy in San Diego, California, with Michael Rosen, his first West Coast venture, where he showcases an innovative approach to California cuisine.
