Holliday taught piano in her home state of Alabama before moving to Florida. She began her professional acting career with the Asolo Theatre Company in Sarasota, Florida, where she remained for ten years. Holliday is an Episcopalian who performed in the St. Andrews Episcopal Choir in Mobile, Alabama. In January 2010, she appeared as herself in the Episcopal Church’s official advertising campaign. In New York City, she performed in the Grace Church (Episcopal) Choral Society in Greenwich Village and directed the Willow Ensemble chamber music series from 1995 to 2008.Holliday relocated to New York City in 1973, where she featured in Alice Childress’ play Wedding Band at the Public Theatre.

Holliday’s big break came in 1976, when she was cast as the sassy, man-hungry waitress Flo Castleberry on the American sitcom Alice. Her character created the classic line “Kiss my grits!” The phrase became part of the American vernacular. From 1976 to 1980, Holliday featured in Alice, before moving on to her own short-lived spin-off sitcom, Flo, in which Flo left Arizona and returned to Texas. The show was popular during its brief first season, but ratings dropped the next season due to a schedule change, and it was discontinued in 1981.Holliday joined the CBS-TV sitcom Private Benjamin as a temporary replacement for series regular Eileen Brennan, who was recovering from serious injuries sustained after being hit by a car.

Holliday’s major film appearances include All the President’s Men, Moon over Parador, Mrs. Doubtfire, the 1998 version of The Parent Trap, and her part as Mrs. Ruby Deagle in the 1984 smash Gremlins, for which she received the Saturn Award for Best Supporting Actress. She has performed on Broadway in revivals of Arsenic and Old Lace (1986) as Martha Brewster, one of the dotty, homicidal, charming old aunties; Cat on a Hot Tin Roof (1990), for which she was nominated for a Tony Award for her portrayal of Big Mama; and Picnic (1994). In the 1998 adaptation of The Parent Trap, she played the director of Camp Walden. She performed in a revival of Arthur at Lincoln Center in 2000.
