In 2010, Voltaggio revealed plans to launch his own restaurant in West Hollywood, California, in a property owned by veteran Hollywood super-agent Michael Ovitz. The restaurant ink. finally opened on September 21, 2011, after various delays. Voltaggio’s intention with the restaurant was to create “contemporary Los Angeles cuisine.” The dining area could seat 60 people, with a private chamber that could seat an extra 10 guests. GQ Magazine dubbed it “America’s greatest new restaurant” in March 2012.
Voltaggio was covertly planning a smaller restaurant around the corner, ink.sack, while publicly developing and preparing ink.sack. Voltaggio conceived and built the shop himself, and when he opened the little restaurant with no notice or fuss, he stunned the culinary world. From August 11, 2011, through 2018, he owned and operated the ink. sack, a sandwich business with two locations on Melrose Avenue (in West Hollywood) and Sunset Boulevard. Michael and his brother Bryan founded STRFSH, a fast-casual fish sandwich cafe in Santa Monica, in October 2017. Estuary, which was run by the Voltaggio brothers from 2019 to March 2022, debuted in Washington, D.C.

Voltaggio did not have the financial or other resources to attend culinary school. Instead, he spent a year in The Greenbrier’s famed culinary apprenticeship program. At the age of 21, Michael completed his Greenbrier apprenticeship under Certified Master Chef Peter Timmins. Later, he worked under chef Peter Timmins in the Ritz Carlton Hotel Naples, Florida, and at Charlie Palmer’s Dry Creek Kitchen in Healdsburg, California. The Bazaar by Jose Andres was nominated for the James Beard Foundation Award for Best New Restaurant in 2008 during his term as Chef de Cuisine.
Voltaggio was the Chef de Cuisine at The Dining Room at the Langham Huntington Hotel & Spa in Pasadena, which won multiple culinary distinctions, including the AAA Five Diamond Award, the Mobil Five-Star Award, and a Michelin Star, one of just a few held by a restaurant in the United States.

Voltaggio starred as himself twice on the American sitcom Young & Hungry, once in the pilot episode in 2014 and once in the episode “Young & Amnesia.” In 2013, he appeared as chef Julio Proust on the sitcom “Suburgatory.” On Iron Chef America, he competed in Battle Iberico against Bobby Flay.
He has occasionally judged and competed on Guy’s Grocery Games. He and Bryan Voltaggio have both appeared on Food Network’s Tournament of Champions.
