Piscopo was signed as a contract player for Saturday Night Live in the summer of 1980. When all of the writers, major producers, and cast members left that spring, the program had gone through a tremendous transformation. With the exception of Piscopo and Eddie Murphy, the whole new cast flopped with reviewers and fans, and they were the only two cast members kept when Dick Ebersol took over the show the following spring. Piscopo moved to the rich neighborhood of Alpine, New Jersey, after the success of SNL.
Piscopo was famous for his impersonations of celebrities like Frank Sinatra. In 1984, he co-starred with Michael Keaton in the film Johnny Dangerously, which received mixed reviews, as well as an HBO special and a book called The Piscopo Tapes for Pocket Books. In 1985, he released the album New Jersey for Columbia Records, and in May 1986, he aired an ABC special called The Joe Piscopo New Jersey Special. Piscopo was addressed in the No. 1 rock single “Jammin’ Me” by Tom Petty and the Heartbreakers in 1987.
Piscopo became interested in bodybuilding in the mid-to-late 1980s. He got into the sport after doing Bruce Springsteen mimics on Saturday Night Live. In April 1988 and June 1990, he was featured on the cover of Muscle & Fitness magazine.

Piscopo was a member of a band, and in May 2021, he performed stand-up and music at a political rally held by businessman Mike Lindell.
