Henderson released Nose to Tail Eating: A Kind of British Cooking in 1999, which includes dishes for trotters, tripe, kidneys, chitterlings, and other animal parts. The book illustrates his cooking philosophy, stating that “it seems common sense and even polite to the animal to use all of it.” Instead of testosterone-fueled bloodlust, it appears to be a moderate approach to meat eating.” Beyond Nose to Tail was published in 2007, and The Complete Nose to Tail: A Kind of British Cooking was published in 2012.

Fegus Henderson Career
Henderson has no official culinary training and has never worked with another chef. Henderson and his wife, Margot, founded the French House Dining Room at Soho’s French House pub in 1992 before leaving in 1994 to open the St. John restaurant. The menu at St. John changes every day, although roast bone marrow and parsley salad are virtually always on the menu. It received a Michelin star in 2009.
He launched St John Bread and Wine in Spitalfields, London, in 2003. In 2009, a Michelin star was granted to a second St John restaurant housed within the hotel in Chinatown. This location is no longer open.
