Talde’s love of cooking started at a young age in his hometown of Chicago, where he learned to help his mother cook meals. He was raised as a proud Filipino immigrant and lived a typical American childhood while immersed in his family’s cultural heritage.
The menu of his eponymous Brooklyn restaurant, TALDE, which opened in 2012 in Brooklyn’s Park Slope neighborhood, featured this distinct Asian-American experience. He opened TALDE locations in Jersey City, New Jersey, and Miami, Florida. In November 2016, Talde opened Massoni at the Arlo NoMad Hotel, his first Manhattan project. Rice & Gold, his second Manhattan restaurant, opened in Chinatown at the 50 Bowery Hotel in October 2017. Talde also had three locations in the West Palm Beach food hall of the Grandview Public Market in Florida. The Corner, Clare’s, and Little Red Truck were their names.
Notwithstanding his work in the kitchen, Talde is the host of Tastemade’s Everything Up In My Barbecue.
