In 1965, she represented the University of Arkansas in the Miss Arkansas pageant and won. Three months later, she announced that she was hanging up the hat and moving to Los Angeles to pursue an acting career. She was in the original cast of Hair at the Aquarius Theatre in Los Angeles. She rose to the role of Jenny and continued to promote music in Seattle, Detroit, Miami, Montreal, Copenhagen and Europe. After returning home, she lived in New York. In 1973, she joined the off-Broadway production of National Lampoon’s Lemmings, playing various roles alongside actors such as John Belushi, Chevy Chase, and Christopher Guest. Following the tour, Belushi appeared on the National Lampoon radio program with Chase, Guest, Bill Murray, Gilda Radner, and Harold Ramis. She appeared on National Lampoon’s Missing White House Tapes and National Lampoon Not Pictures, The Pain.
Many of the National Lampoon cast later joined Saturday Night Live. Coulette was a close friend of John Belushi, and after his death, she wrote and performed a tribute to him for an SNL episode, set to the song “Western Paradise” by Belushi’s widow Judith Jacklin. In 1976–77, Coulette played the role of Rosamund in the Broadway production of the musical The Thief, and appeared on her first Broadway album, opposite Barry Bostwick. She also appeared on Broadway in Pump Tubs and Dinettes and in the Broadway production of Cowgirls. Cullette wrote the song “Best of Us” for Jimmy Buffett on his Grammy Award-nominated 1985 album Riddles in the Sand. She also sang background vocals on his album “Dead”. In 1992, she recorded an album of her songs, American Secrets. Many of the semi-autobiographical songs from the album were featured in the musical productions of The Runaway Beauty Queen, produced at the Florida Studio Theatre in 2005 and at the Vineyard Theatre in 2010.
