Robbins began working at the Arcadia restaurant after graduating from culinary school, and she later joined Wayne Nish at his March restaurant. She worked with Anne Rosenzweig at The Lobster Club and Arcadia in New York City before traveling to Northern Italy, where her cooking style was influenced. She got back to the US to work at the Soho Fantastic Lodging, and moved to Chicago to work with Tony Mantuano as leader culinary expert at Spiaggia. She frequently cooked for Barack and Michelle Obama and the restaurant was nominated twice for a James Beard Foundation Award while she was working there.
Robbins opened Lilia in a whitewashed building at the Union Avenue and North 10th Street intersection in North Williamsburg, Brooklyn, in January 2016. “I just always had an affinity for the ingredients… the cheeses and olive oils… and then as I started getting older and traveling, there’s something about Italy that just resonated with me,” Robbins stated of the restaurant’s Italian pasta specialty.
