Nicole is a qualified director and producer who started her career right out of college. She was the head of video production and promoter at Extasy Records in 2002. Nicole was appointed as a judge on the popular television show Redemption Song in 2008. Various musical artists were featured in the series. She later rose to the position of Vice President of Universal Music Group and CEO of Rocket in My Pocket. Nicole then began making music videos in 2005. She then created television commercials for celebrities such as Usher and Lady Gaga. Nicole eventually returned to various producing jobs in Hollywood for successful television shows and films.

Ehrlich has also directed and produced television commercials for Usher and Samsung, Lady Gaga and Google Chrome, and President Barack Obama and Code.org. She executive produced the television documentary Dropped in 2006 and the video documentary Another Station: Another Mile in 2010. She executive produced the television film Inside: El DeBarge in 2011, produced the television film Countdown to Mindless Behavior and co-produced the horror film Detention. She also established the companies Rocket in my Pocket and Valis Studios.  She was nominated for an Emmy in 2015 for her work as a producer on the film The Hunting Ground.
Ehrlich has curated the annual Art Basel Miami exhibition Celebration of Women in Art since 2013.
